How much is a kilo of salmon, and why do fresh, frozen and smoked salmon cost different amounts?
Salmon prices change, so the current price of every product is shown on its own product page and updated there. The price depends on the type (fresh Scottish, frozen fillet or smoked), the cut and the pack size, which runs from 200 g portions up to whole sides and whole fish. What is the difference between Norwegian and Scottish salmon?
Both are Atlantic salmon; the difference is where they come from and how they reach you. Our Soly salmon fillets and portions are Norwegian, while Caviale’s fresh Scottish salmon is flown in and never frozen. The origin is listed on each product page, and the Scottish range is in fresh salmon.

What is “saumon fumé”? Is it the same as smoked salmon?
Yes. Saumon fumé (often written “سيمون فيميه” in Egypt) is simply French for smoked salmon. Our smoked salmon is smoked at the Maxim Food factory in Egypt and comes from Soly and Caviale in packs from 50 g up to 1 kg, plus smoked salmon trimmings. See the full smoked salmon range.

Is smoked salmon ready to eat, and how long does it keep after opening?
Yes, it is ready to eat with no cooking; take it out of the fridge about ten minutes before serving. Keep it refrigerated at 0–4°C, use it by the date on the pack and, once opened, within three days, as the product instructions say (for example Soly Smoked Salmon 100gm).

Is frozen salmon different from fresh, and how do I thaw it?
Fresh salmon has never been frozen and is kept in the fridge for the time stated on its product page; frozen salmon keeps at -18°C for up to six months. Thaw frozen salmon overnight in the fridge, never at room temperature, and do not refreeze a piece that has fully thawed. Browse frozen salmon portions and sides.

When is fresh Scottish salmon delivered?
Fresh Scottish salmon arrives by air once a week, on Tuesday; whole fish and whole-side orders must be placed by Sunday to make that week’s shipment.
