Mussels come two ways: whole in the shell, for pasta and steamed dishes, and as cleaned mussel meat, ready to add to rice, soups and pasta in minutes. Frozen mussels are already cleaned and cooked, so they only need gentle heating. Below is how to choose between them, a quick recipe, and today’s live prices.

Whole mussels or mussel meat?

  • Whole mussels (in shell): best for pasta, mussels in white wine-style sauce or tomato sauce, and sharing platters.
  • Mussel meat: no shells to remove, ideal for seafood rice, paella-style dishes, soups and kids’ pasta.

How to prepare frozen mussels

  1. Thaw in the fridge, or add straight from frozen to a hot sauce.
  2. Heat gently for 3–5 minutes only; overcooking makes them rubbery.
  3. Discard any whole mussels that stay tightly closed after heating.

Quick recipe: garlic and tomato mussels

Soften garlic and onion in olive oil, add chopped tomatoes and a pinch of chilli, simmer for 10 minutes, then add the mussels and heat for 4 minutes. Finish with parsley and lemon and serve with pasta or bread.
