In short: crab meat is real crab, taken out of the shell after cooking and packed ready to eat. It is not the same as crab sticks (surimi), which are made from white fish with crab flavour. Crab meat is sold in grades: jumbo lump (large pieces of body meat), lump medium (smaller body pieces) and claw meat (darker, stronger in taste and cheaper).

If you want real crab flavour in a salad, pasta or sushi without cracking shells, crab meat is the easy way. This guide explains the grades, which one suits which dish, and how to store and serve it.

What is crab meat?

Crab meat is the meat of the crab, picked from the shell after cooking, vacuum packed and kept cold. You get only the meat, with no shell, claws or cleaning.

Crab meat grades: jumbo, medium or claw?

Jumbo lump

The largest pieces of body meat. They stay whole on the plate, so they are best for serving and premium salads: Caviale Cooked Pure Crab Meat Pieces Lump – Jumbo 150gm.

Lump medium

Smaller pieces of the same body meat, ideal for pasta, risotto, crab cakes and fillings: Caviale Cooked Pure Crab Meat Pieces Lump – Medium 150gm.

Claw meat

Meat from the claws and legs. It is darker, stronger in flavour and cheaper than body meat, and works well in soups, sauces and spiced dishes: Caviale Cooked Pure Crab Meat Claw Pieces 150gm.

For a larger pack there is also Caviale Crab Meat 200gm.

Which grade for which dish?

  • Crab salad for guests: jumbo lump.
  • Crab pasta or risotto: lump medium.
  • Crab cakes: medium, or a mix of medium and claw.
  • Soup or crab sauce: claw meat.
  • Sushi and hand rolls: medium or jumbo, or surimi as an everyday option.

Three quick ways to serve crab meat

  1. Crab salad: fold the crab gently with mayonnaise, lemon juice, chopped celery and black pepper. Serve on lettuce or toast.
  2. Garlic butter crab pasta: sauté garlic in butter, add cream or a little pasta water, toss in the pasta and add the crab last so it only warms through.
  3. Crab cakes: mix crab with breadcrumbs, egg, mayonnaise and parsley, shape into patties and pan-fry until golden on both sides.

Tip: the crab is already cooked, so heat it only briefly. Long cooking dries it out.

Storage

Our crab meat is vacuum packed and delivered chilled. Put it in the fridge as soon as it arrives and follow the storage time printed on the pack. After opening, seal it well and use it quickly.

Crab meat price

Price depends on the grade: jumbo costs more because the pieces are larger, and claw meat is the most affordable. Live prices are on each product page, and you can compare them in Seafood Cocktail.
