Storage

How to prepare it

Pan-sear skin-side down for 4–5 minutes, then 2 more on the other side, or bake at 200°C for 12–15 minutes.

Fresh orders from Scotland are delivered weekly by air every Tuesday Fresh portions are delivered to you on the same day, subject to availability
whole side & whole fish orders must be placed by Sunday to be included in the upcoming Tuesday shipment. Orders before 5 PM go out that day, in one of three windows: 11–2, 3–6 or 6–9. Zones and fees are on the shipping and delivery page.

Why cold chain decides the taste

Seafood is not judged at the moment it is cooked but at every hour before it. A break of two degrees for an hour costs more than an extra minute on the heat ever will. Every order leaves our facility cold and stays cold until it reaches the door, which is the reason a piece from us behaves differently in the pan from one bought loose at room temperature.

Buying for a week rather than a day

Households that shop once a week get more out of an order than those who buy daily: the pack is opened once, portioned, and what is not needed goes back sealed. Split the pack into meal-sized portions before storing rather than after, and label the date. It removes the guessing later and stops the whole pack being thawed for one meal.

Ordering and delivery

Orders placed before 5 PM go out the same day in one of three windows, and orders above EGP 2,499 ship free across the delivery zones. Check the box in front of the courier before he leaves — anything that arrives outside its temperature or damaged is replaced, and that check takes seconds.
