At six to eight pieces a person, 350 pieces covers about 50 people as a main course, or roughly 88 as part of a larger table.

How it is made

The rice is seasoned the same day and the rolls are made hours before delivery, not the night before. The seafood comes from the same shipments Maxim Food supplies to hotels and restaurants across Egypt.

Storage

It is best consumed on the same day, but it can also be kept refrigerated for up to 24 hours.. Sushi is not for freezing.

How to eat sushi properly

Dip the fish side, not the rice — rice soaks soy and falls apart. Eat a piece whole rather than in halves; it is built to be one bite. Ginger goes between pieces to clear the palate, not on top of them. And wasabi belongs in small amounts, under the fish rather than stirred into the soy.
