How much do you need

Each side serves roughly 7 to 8 main courses at 190g per person, so the full pack covers about 79 mains. Because every side is packed on its own, you take out only what you need and keep the rest stored.

Storage and thawing

Follow the storage instructions printed on each pack. Frozen sides keep in the freezer at -18°C; thaw overnight in the fridge and never refreeze a side that has fully thawed.

How to cook a whole side of salmon

Season the side, lay it skin-down on a lined tray and bake at 200°C for 15 to 20 minutes, until the thickest part flakes easily. You can also cut it into portions for pan-searing or grilling, or slice it thinly for sashimi if the pack is marked sashimi grade.
