Types of Sushi: Nigiri, Maki, Oshi, Gunkan and Which to Choose
The main types of sushi are nigiri (a slice of fish on hand-pressed rice), maki and hosomaki (rolls wrapped in seaweed), uramaki (inside-out rolls with rice on the outside, such as California and Philadelphia), oshi (pressed sushi cut into blocks), gunkan (a rice “boat” wrapped in seaweed and topped with crab, salmon or roe) and temaki (a cone-shaped hand roll). Below is what each one is, which to choose, and how much to order for one person or a whole table.

The types of sushi, explained
Nigiri
A small mound of seasoned rice pressed by hand and topped with one slice of salmon, tuna, shrimp, crab or octopus. Nigiri is the purest way to taste the fish itself. Maxim Food offers salmon, tuna, shrimp, crab, octopus and tempura nigiri.
Maki and hosomaki
Maki is a roll with seaweed (nori) on the outside and rice and filling inside. Hosomaki is the thin version with a single filling, such as salmon, tuna, shrimp, crab or cucumber (kappa). Light, simple and great for children.
Uramaki (inside-out rolls)
Here the rice is on the outside and the nori is inside, often coated with sesame or masago. The most popular rolls in Egypt are uramaki: California, Philadelphia (salmon and cream cheese), Dragon, Rainbow and Spider.
Hot rolls
Rolls that are fried or finished warm, such as tempura and “hot” rolls, plus Dynamite and Volcano rolls topped with a creamy spicy sauce. A good choice for people trying sushi for the first time.
Oshi (pressed sushi)
Rice and topping are pressed together in a mould and cut into neat rectangles. Oshi salmon is rich and filling and looks impressive on a sharing platter.
Gunkan
Gunkan means “battleship”: a strip of nori wraps an oval of rice, and the top is filled with crab, salmon, shrimp or tuna. Easy to eat in one bite.
Temaki
A cone of nori filled with rice and fish, eaten with your hands like an ice-cream cone. Fun for gatherings and for kids.
